The best BBQ meat in Perth, Big Don's Smoked Meat is coming to Geelong for an impressive collaboration with Wildfire Craft BBQ.
Over the past few years, Wildfire Craft BBQ has been devoted to churning out the best all-American, slow-cooked, tangy barbecue goodness Geelong has ever seen.
From pop-ups and running a business from their Armstrong Creek garage with a backyard smoker to opening a dedicated Texas-style barbecue restaurant in Newcomb with a large offset smoker fuelled by locally sourced sugar gum and blue gum, barbecue royalty Geelong born-and-bred Casey Hildebrand and his partner Eliza continue to impress, earning a reputation now for arguably the best barbecue in Geelong.

Now Wildfire Craft BBQ is continuing to push the envelope for Texas Barbecue in Geelong, joining forces with brisket god Donovan Macdonald, the legend behind Perth’s Big Don’s Smoked Meats.

Those in the BBQ realm will be well acquainted with Big Don’s underground Texas-style meat eats featuring dry-rub flavouring and slow, ever-so-patient cooking times for unmatched quality. Much like Wildfire Craft BBQ, Macdonald went from running pop-ups all over Perth, dishing up barbeque for people by the hundreds with his underground barbecue, to opening his own permanent location too.
Now renowned for his drool-worthy handiwork, Big Don’s Smoked Meats and Wildfire Craft BBQ have collaborated for an barbecue menu that local barbecue lovers can get around.
The pop-up will run on Saturday 24 June from the Newcomb venue, from 11am to 4pm. Pre-order tickets open at 5pm today (2 June), and are highly recommended! The full menu will drop soon but you can expect to see the likes of Sticky Lamb Ribs, pork ribs, Eliza’s honey butter cornbread, Birria tacos (complete with dipping consomme) and the Donfire Platter, packed with perfectly-barbecued meats like Wagyu brisket, Peking duck, Nashville hot chicken sausage, and so much more.
Big Don currently has a popup in Melbourne with Houston’s Barbecue in Keilor east, which is already sold out, so let that be a warning to all you barbecue lovers out there.
