We’ve all witnessed the internet sensation unfold, with cinnamon scrolls racking up a whopping 1 million views across 52 social media videos in Australia just last week. But Baileys has now entered the chat, sprinkling some festive magic on this sweet phenomenon with a irresistible twist – Baileys Cinna-buns!
Because we love Christmas and we love a sweet, sweet snack, our friends at Baileys have shared with us their mouthwatering recipe for their iconic Cinna-buns!

Baileys Cinna-buns Recipe
Ingredients:
For the Dough:
- 1 ¼ cups hot milk
- ¼ cup warm water
- 17g packet instant dry yeast
- 1 large egg
- ¼ cup melted butter
- 3-4 cups plain flour
- 1 teaspoon sea salt
For the Filling:
- 4 tbsp melted butter
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 2 tablespoons ground cinnamon
For the Topping:
- ½ cup butter
- 1 cup packed light brown sugar
- ½ cup maple syrup
- 2 tbsp whipping cream
For the Icing:
- 1.5 cups icing sugar
- 2 tbsp whole milk
- 30ml Baileys Original Irish Cream
Method:
Step 1: Dissolve yeast in warm water in a small bowl and set it aside.
Step 2: In a large bowl, mix milk, sugar, melted butter, salt, and egg.
Step 3: Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle.
Step 4: Knead dough on a lightly floured surface for 5 to 10 minutes. Place in an oiled bowl, cover, and let rise until doubled in size, usually 2 – 3 hours.
Step 5: Prepare the topping by melting butter, brown sugar, and maple syrup in a saucepan over medium heat, stirring until melted and bubbling.
Step 6: Remove from heat, add cream, mix well, and pour into a greased 9-x-13-inch pan. Set aside.
Step 7: In a small bowl, prepare the filling by mixing together butter, brown sugar, and cinnamon.
Step 8: Punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle.
Step 9: Spread the filling over the rolled dough, roll up, and cut into 12 slices.
Step 10: Place the sliced buns into the pan with the sauce and let rise until doubled (about 45 minutes to an hour).
Step 11: Pre-heat oven to 175C. Bake for 20 – 30 minutes or until golden brown. Let cool in the pan for 5 minutes before flipping onto a serving tray.
Step 12: While the buns cool, whisk together icing sugar, Baileys, and milk until you have a pouring consistency. Serve the buns warm, sticks side up, with a generous drizzle of the Baileys icing.
