Ah, carbohydrates. You have been through so much; so misunderstood, so unnecessarily vilified. But there are a group of people who know your worth more than any… the Italians. They’ve been curating and perfecting the humble carb for centuries. Their greatest contribution? Pizza, pasta, garlic bread, maybe?

Joining the long lineage of lovingly prepared Italian cuisine is the incredible Che Vuoi, Barwon Head’s newest rustic Italian restaurant. With a special focus on wood-fired pizza and handmade pasta, the team at Che Vuoi are here to make all your carby dreams come true.

Staying true to their roots, the guys at Che Vuoi are using authentic techniques and recipes from their Nonna, hoping to share the love they feel in food. Their modus operandi? Come as a guest, leave as a friend. So Italian!

The menu boasts a mouth-watering selection of pastas and gnocchi, as well as locally sourced seafood, cheeses, veggies and artisan meats for your pizza toppings. Vegetarians are well catered for here, with four delicious options to choose from. They didn’t forget about vegans either. The ‘Che Vuoi’ pizza itself features pumpkin puree, vegan goats cheese, olives, onion, sundried tomatoes, chilli and sultanas. Drooling yet?

It wouldn’t be right to enjoy an authentic Italian meal without a glass of wine. Thankfully there’s a lot to choose from here. Hosting some top-quality bottles from both Italy and Victoria, there’s a glass for every taste and occasion. Non-alco’s have plenty of options to wash their meal down with too; limonado, or perhaps a hibiscus kiss kombucha.

For those with a sweet tooth the Nutella Calzone, Tiramisu al Cioccolato (whose recipe is so secret it can’t be described on the menu) or Nutella Cheesecake will get you on your sugar high. Ideally don’t eat throughout the day so you can fit in all the deliciousness here.

Inside, Che Vuoi manages to tread the line between suave and homely, honouring the best eateries in Italy. There’s the roaring open wood fire ovens, copper pots adorning the brick walls, marble breadboards and of course, the smell of fresh pasta. Customers can’t sit in just yet, but when that day comes, you may just never want to leave.

While we can’t exactly get to Italy right now, Che Vuoi is the absolute next best thing. Come down, grab your takeaway goodies and float towards the pearly, carby gates of heaven. Bon appetite!
