Savour the ocean’s best at The Raw, Geelong waterfront’s newest seafood spot

If you’re all about fresh seafood and unique dishes, The Raw is your new go-to spot in Geelong.

You may already know the crew from Brown Deli, but at The Raw, they’ve taken things to the next level with a menu full of fresh, sustainable Australian seafood and some seriously creative twists.

The vibe here is all about fresh, top-quality seafood done right. As soon as we walked in and saw the display we could tell they’ve nailed it. First up, we dug into a platter of freshly shucked oysters with red wine vinegar and shallot. These oysters were pure heaven — plump, briny, and bursting with flavour. The vinegar and shallots gave them just the right kick to go smoothly down the gullet (sorry for the visual but, trust us, they were fab).

Next, we went all in with the assorted sashimi — we’re talking salmon, tuna, kingfish, and octopus. Each bite was like a fresh ocean hug for your taste buds. The salmon was buttery smooth, the tuna packed that rich, melt-in-your-mouth moment, and the octopus added a nice delightfully chewy texture. It was a fresh, no-fuss take on sashimi that hit the spot.

Then came the flame-grilled salmon rice bowl with teriyaki sauce. The salmon had that perfect flavourful char on the outside while still staying juicy inside. Paired with the teriyaki sauce and fluffy rice, it was comfort food with a bit of a gourmet twist. Simple, satisfying, and delicious. Definitely a personal favourite.

Now, if you’re after something a little indulgent, you have to try the snowy cheesy fries. Yes, you read that right. These fries were crispy, golden, and covered in a light cheesiness that you’ll dream about long after you leave. Honestly, they’re dangerously good — just the right amount of indulgence.

For something a bit more out there, we dug into a variety of the sushi sandwich options.

The spicy fresh tuna and cream cheese sushi sandwich was next-level stuff. The tuna was spicy and creamy with just the right amount of chive, chilli mayo, and spring onion cream cheese.

Another winner was the octopus sushi sandwich with lemon dressing, black olive, and cucumber. The octopus was tender and full of flavour, the lemon dressing added a fresh zesty kick, and the black olive brought in a nice salty depth. The cucumber added that perfect crunch, making each bite a refreshing combo of flavours.

For something hearty, we went for the Wagyu Bulgogi and kimchi sushi sandwich. It had tender Wagyu beef, spicy kimchi, and miso mustard that tied it all together perfectly. If you like bold flavours, this one’s for you.

And last but not least, we couldn’t resist the truffle mushroom sushi sandwich. With teriyaki mushrooms, pickled onion, and a drizzle of truffle mustard, it was rich, earthy, and so satisfying. This one’s for all the truffle lovers out there.

These sandwiches are much like sushi, but cooler and way more fun. Definitely one to try if you’re looking for something a bit different.

What really stands out at ‘The Raw’ is the commitment to serving up the freshest, most sustainable seafood, and it shows in every dish. Chef Jack, the brains behind the operation, has years of experience in the industry; he won the 2018 Australian Chef of the Year competition and previously managed two hatted restaurants in Adelaide. You can tell he’s bringing his A-game to every plate. Whether you’re grabbing a quick lunch or settling in for something more indulgent, ‘The Raw’ has got you covered.

The Raw is definitely making waves in Geelong’s seafood scene, and with more to come (they’ll be launching dinner service soon!), it’s only going to get better.
