Scoring the prime position on the corner of Ryrie St and Gheringhap St (previously Cafe Rio), Toasty has opened its doors today, providing Geelong CBD with the ultimate comfort meal.

The brainchild of Geelong locals Mitch Hoare and Sarah Mithen, at Toasty you’ll find 10 generously-sized (read: huuuuge) toasties to choose from. Stuffed between two pieces of thick-cut (but not too thick) bread brushed with butter and grilled to the utmost perfection, you can opt for a classic grilled cheese (made with three cheeses), Chavo (chicken and avo), Big Tommy (tomato, avo, mayo and cheese), NY Salmon and cream cheese, a Cuban or a good old grilled veg with vegan cheese.

If you’re one to take your toasties up a notch, there’s also the cheeky cheeseburger, with slow-cooked beef cheek, tomato sauce, American mustard, yellow American cheese and pickles; a spag bol which is just carbs on carbs and a whole lot of cheese; and a Sunday roast. The big mumma of the toastie range, this one is packed with pumpkin, crispy baked potato, roast lamb, gravy, mint sauce, tasty cheese and Dijon mustard. Holy mumma indeed…

There’s also the option to level-up your classic grilled cheese by requesting the ‘Grilled Beast’, made with three kinds of cheese in between a layer of mustard and mayo, topped with ham and caramelised onion.

Oh, and the best news? They offer gluten-free ingredients and vegan cheese so no one has to miss out. Currently, it’s just their bread that isn’t gluten-free but they’re working to stock some GF bread for all the coeliacs out there.

With a killer menu, they’re also slinging cups of Rosso Coffee Roasters, alongside some pretty schmick looking thick shakes and all your other regular suspects to make sure you leave both full, caffeinated and hydrated – what more could you want in life?

To top it all off, the space is just as fun as the food and service. Between the bright stunning mural from local artist and designer Lauren Green (@lozzzgreen), the neon Simpsons quote, and the enthusiastic waves from the staff as you come and go, this place exudes all the good vibes that makes going out for toasties one of the best things you’ll do all day.

Ah life is good.
