All aboard the ferry, 2022 is coming in hot at The Conti.
Standing proud atop Constitution Hill, the Hotel Continental has been a cornerstone of Sorrento’s dining and entertainment precinct since 1875. While it’s certainly been a while between cocktails, 2022 will see the return of the iconic ‘Conti’.
Publican Craig Shearer (of the Terminus Fitzroy North) has been working on the multimillion-dollar redevelopment of this beloved 145-year-old heritage-listed seaside hotel for some time now, and after a series of delays in approvals, the famed hotel is now slated to open in stages from March to June 2022.
The key takeaways
- The Continental Sorrento (AKA the Conti) is set to reopen in early 2022
- The new venue will include a brand-new restaurant by chef-restaurateur Scott Pickett
- There will also be a 108-room hotel from the InterContinental hotel group

Opening in the heart of Victoria’s most sought-after seaside town with unforgettable views over Port Phillip Bay with a new name, a new signature restaurant, 108 restored hotel rooms and a ballroom, it’s an understatement to say that the new year is well and truly looking up.
Now going by the name ‘The Continental Sorrento’, the late-night venue will have 13 dining and drinking spaces (yes, really!), including a public bar, a huge beer garden, dance floor, rooftop deck, pool, and signature restaurant, Audrey’s, spearheaded by celebrated chef-restaurateur Scott Pickett (Longrain, Chancery Lane and Le Shoppe).
Named after Pickett’s grandma, who he says inspired him to cook, Audrey’s will showcase everything from pub classics to more formal degustation menus. Nick Deligiannis will lead The Continental team as Head Chef at Audrey’s, which will open in March 2022.
Other highlights include a late-night cocktail bar Barlow, a speakeasy-inspired space serving the finest cocktails and delectable bar snacks in a luxe setting; The Atrium, filled with awe-inspiring architecture featuring a soaring glass ceiling and a towering red brick fireplace; the Sunset Terrace which is the perfect venue for a refined, yet carefree seaside experience; and cocktail bar and lounge Coppin’s Lounge. Warm, moody and timeless in its design, Coppin’s Lounge is the perfect place to settle into for an evening of delectable drinks and conversations.
