Geelong meet Atar Singh, an internationally renowned chef. Renowned for his appearance on SBS Food’s Chef Lines and as former head Chef at Atta in Albert Park, Chef Singh has a wealth of knowledge about Indian cuisine, having trained with some of India’s best chefs in the world. We’re not exaggerating there, he literally trained under the guidance of a chef from Moti Mahal (the birthplace of the original Indian dish Butter Chicken), as well as working under Celebrity Chef Sanjiv Kapor and Harpal Sokhi at City Park Hotel in India, and Chef Kapoor from India’s Yellow Chilli.

Quite the resume so far. Add in eight years in Japan where he presented Indian food on Japanese TV and a burning desire to infuse his culinary talents in a more multicultural country, Australia struck gold when Singh decided to make the move to Australia and open up Haldi, his first restaurant in Melbourne.

Now it’s been three years of gifting Melbourne with traditional Indian (complete with authentic flavours and traditional recipes) and now it’s our turn.

Bringing 25 years of experience to regional Victoria, chef Singh has set his sight on Geelong, launching his new venture Curry at Corio. Since opening in November last year, Curry At Corio is somewhat of a hidden gem, unassumingly located in the Corio Village Shopping Centre.

As expected, the menu here is stacked with winners. You’ll find some stand-up butter chicken, creamy chicken Korma, tender beef Rogan josh, a flavour-packed Rajma Masala and a spicy lamb vindaloo. The best part is all the curries come with complimentary rice. You’ll also want to try the chef’s special chilli garlic fish and eggplant masala, as well as the Paneer Tikka Achari, which is chunks of homemade paneer (cottage cheese), marinated in yoghurt, pickle spices and roasted in a hot clay oven.

And of course, there’s some butter roti and garlic Naan to scoop up every last drop of the delicious curry.

If you’re heading in with a group, you can opt for the banquet options which are perfect for sharing with two to four people, allowing you to load up on your preferred dishes at a discounted price.

For those with a sweet tooth, round out your Indian experience with the Gulab Jamun (a ball of deep-fried paneer boiled in sugar syrup), Mango Kulfi (similar to ice cream), or the Rasmalai, a royal sweet made with cottage cheese, saffron, cinnamon and thickened milk.

It’s also no stress for those with food intolerances. Curry At Corio’s menu is well-designed to cater to almost every dietary requirement, from vegan and vegetarian to gluten-free and nut-free – there’s something for everyone.

“We are so excited to bring our authentic international Indian flavours and cooking methods to locals in Corio and Greater Geelong,” reveals Chef Singh.

“We grind all of our own spices and our slow cooking methods means you get a lot of flavour but in a much healthy version.”

If you’re yet to experience the wonders of dipping your naan in a big old dish of chef Singh’s butter chicken, you’re not really living.
