- Open Fridays from 4pm-late, and on Saturdays and Sundays from noon-late.

Taking over level 2 of the beloved lavish central hotel, the new bar space has a beautiful large terrace with a gorgeous view of the bay, offering classy coastal vibes, with all day drinks and delightful local produce featured on its tapas-style menu.

Teaming up with Grey Goose, the pop-up bar feature mouthwatering Grey Goose cocktails (available in glasses or jugs), plus Bombay Saphhire Cocktails and a selection of more classic concoctions. Our picks include the Strawberry Fields, the Sunset Negroni and the passionfruit sour. Options from local wineries, distilleries and Bells Beach Brewery also feature on the pop-up menu.
Looking to the food, summer bites shine bright with dips and breads, Carpaccio, summer caprese and Oysters. A menu ideal for sharing, there’s also arancini, charcuterie and cheese boards, Pork Belly Bao, Chicken Tikka and succulent Lamb ribs, rounded out by truffled chips, hot chips, potato wedges and salad.
Novotel Geelong general manager John Dickson and the team have been busy getting everything ready for a sensational summer at Novotel.
“We’re really excited to welcome our much-loved locals and Geelong visitors into our new summer pop-up bar on level 2 at the Novotel Geelong,” Mr Dickson said.
“Our sunset sessions will be a fantastic place to catch up for a drink or a bite to eat where you can simply sit back, relax and enjoy the waterfront views overlooking Steampacket Gardens and the beautiful bay while our friendly staff serve you.”
Well-equipped for hot days with icy-cold cocktails, plenty of shade and proximity to water, this new space will feel like a retreat, with fairy lights, plenty of lush vertical gardens and bright foliage, live DJs, a killer tapas menu and the best views in the city.
