We checked out the new RIBZ Master Grillers, here’s what we thought.

When a place has a line at the door on opening and sells out the first day, it’s a pretty good sign its onto a good thing. With no designated ribs joint quite like this one, RIBZ Master Grillers is a point of difference in Geelong – a really juicy, well-marinated point of difference.

First up we ordered the pork “Lil Hercules” and beef “Rinky Dink” – which were the 250g servings of ribs with a side of chips. As teasing as it is, sitting alongside and open kitchen and watching the masters at work is pretty nice. You can see if shit goes down, or how well the kitchen staff work together – which is often indicative of greatness elsewhere.

On receiving our dishes the aroma filled the space and taking a “before” photo proved to be a difficult feat. My ribs were the pork variety and they were tender, loaded with flavour and, most importantly, not loaded with fat – which is apparently a common thing for pork ribs. I’m not a massive meat eater (I’m much of a roast chicken gal if any meat at all) but I can say hands down I’d eat here again (and again). Only next time, I’d go for the 500g order of meat, as I was left a little not-quite-full feeling after the meal. My partner in meat-eating-crime however was suitably in a food-coma.

The greatest thing about this joint is you can really see the family pride in what they do, and that sauce (which we’ve heard takes hours to prep and make) is something magical.
