Hey Foodies!

If you have been following my Insta account, you would have seen that I’m working closely with Shane and Adele from Geetroit Foodie. These guys are making an EPIC cook book with plant-based recipes, and yours truly is photographing the whole book!

We have done over six or so shoots and every one of them has been so much fun because let’s be real, all that food has to be eaten. I cannot wait for their upcoming book, so once it’s released, I will let you know.

I have been that inspired by their way of life that I thought I’d jump on the bandwagon of a plant-based lifestyle… well for one week to see how I truly go. For the whole week, I have cut out all animal products and upped by daily intake of fruits and veggies.

So far, I’m feeling great. So who knows, maybe in a months time I’ll report back whether I’ve stuck to it or not.

Shane and Adele have been really supportive during this time, providing me with an exclusive program they will be releasing early next year. They are in the process of making a seven day meal plan for people to follow in an attempt to try a plant-based lifestyle. I have cooked the majority of the meals and wow I am feeling very full and happy after eating all the food. For once I’m not feeling bloated and sleepy after a meal!

These guys have been super kind and let me submit one of the amazing recipes that will be inside their program.

Curry Soup

1 brown onion (diced)
1 tsp chilli sauce
2 cloves of garlic
2cm fresh ginger, or 1 tsp
1 tbsp curry powder
Juice of 1 lemon

1 can of coconut cream
2 cups of broccoli
2 carrots
6 cup mushrooms (sliced)
Green onion and sprouts (optional for garnish)
Noodles (udon or rice)
3 cups of water

Method:

1.Dice onion, garlic, chilli and ginger (speed 5, 5secs)
2.To a saucepan (or thermomix) add tbsp water, curry paste, lemon, onion, garlic, chilli and ginger. Saute until golden and fragrant (4mins, speed soft, varooma).
3.Add broccoli, carrots, mushrooms, coconut cream, water and saute (8mins, varooma, soft speed)
4.Cook noodles as per packet instructions
5.Serve by combining soup and noodles then garnish with green onion and sprouts
