Yo Forte readers, let’s chat Food!

I am currently half way through one of those “I’m trying to be healthy challenges”… you know those ones where you think you can go ahead and give up sugar for 8-10 weeks in the hope of being the best version of yourself… INSERT SARCASM… Because we are human and you have to live a little and eat a bit of naughtiness while you are attempting to be a cool healthier version of yourself!

You may have seen across my socials how “healthy” I am ….cough cough (goes and buys Mc Flurry post gym workout because ‘treat yo self’).

Don’t get me wrong I eat quinoa, plant based food, kraut, green smoothies and lots of fish… but I’m also this chick who loves a decent size burger with cheese dripping down the sides… drooling already!

I am going through this huge phase at the moment where I’m attempting to juggle the whole “balance” thing of eating say 80% healthy, then having 20% of naughtiness, in the form of a cheat day or meal depending on how hard I have worked out!

I am hugely lucky as my husband Nate is a chef and personal trainer in the making so he is always suggesting or making great alternatives, like the other night I was craving muffins so he whipped up these healthy apple muffins, so I thought Id share the recipe with you guys in the hopes that if you are struggling with the whole balance thing this recipe should help you on the way!

3 cups almond meal
2 teaspoons baking powder
4 eggs
1 cup preferred sweetener (rice malt or pure maple is a great sweetner)
1/4 cup coconut oil
2 tablespoons of chia seeds
1 cup of pear or apple chopped, sliced or diced
1 tsp Vanilla bean paste/ essence
1 tsp ground cinnamon

Mix all ingredients together and put in a muffin tray make sure your oven is heated to 180 and cook for about 30-40 minutes.
